Gamay, Duras, Ondenc. Vinified entirely without added sulfites. Whole-cluster pneumatic pressing – the press wine here is the best. Rapid malolactic fermentation and early bottling. Carbonic maceration of the three grape varieties.
Tasting: Nose of redcurrant and raspberry. Round, velvety palate with notes of grapefruit, rose, and a touch of white flowers.
Pairings: Perfect with friends and a charcuterie board, ham pie, lamb’s lettuce salad with bacon and chicken breast. In winter, ideal with roasted chestnuts. Excellent with fruit-based desserts.
Details: 75 cl Burgundy bottle. Vines 20–40 years old, density 5000 vines/ha, yield 30 hl/ha. Manual harvest in 40 kg crates.
