Vinification:
Mechanical harvesting with temperature controlled maceration at 15°C for 72 hours. Temperature controlled fermentation at 29°C and malolactic fermentation at 21°C. Aging in tanks prior to bottling to maximize the fruit aromas and delicacy of the wines.
Tasting Notes:
Brilliant ruby color, delicate fresh fruit on the nose. Round and full-bodied on the palate with notes of cherry and raspberry. Elegant and fine tannins, a well structured wine with a long generous finish.
History:
For more than six generations, this estate situated in Saint Sulpice de Faleyrens, near Saint-Emilion, has been the property of the Dupuy Family. It has always been known for its terroir, tradition and quality.
Today, Eric Dupuy, represents the sixth generation. He helps to grow the domain at the side of Jean-François Fonteneau. Since 2018, Château Gros Caillou, under the impulse of its new owner, has begun a process of organic farming.
In 2017, Chateau Gros Caillou / Château Moulin de Cantelaube became the property of Jean-François Fonteneau whose experience in other appellations aims to obtain recognition of this superb terroir. Properties are now parts of Vignobles Fonteneau, founded in 2018.
