Piccolo is made from old-vine Cinsault grapes. The grapes are destemmed and transferred to the vat by gravity. Fermentation occurs spontaneously using indigenous yeasts. During fermentation, pump-overs and punch-downs are carefully adjusted according to tasting to avoid over-extraction.
