Product detailed description
Terroir: clay-limestone soil with rounded pebbles.
Harvest: mechanical, late August to mid-September, early morning.
Vinification: destemmed and crushed grapes, alcoholic fermentation at 22°C, maceration 10–15 days with gentle, regular extraction, malolactic fermentation.
Aging: 6 months in tank, 2 rackings, before blending and filtration.
Bottling: at the estate, stored in our cellars.
Tasting: deep purple color, aromas of blackcurrant, blueberries, and spices; soft, round, and fruity palate.
Pairing: grilled red meat, lamb rack with fleur de sel.
