Chabichou du Poitou is the most famous goat cheese in the region. Based on raw milk, its very pleated rind has a fine white and yellow natural flora. Its dough is very white, dense and firm, which can become slightly brittle after a prolonged ripening. Chabichou is a rather soft and melting cheese, without aggressiveness. It has a good caprine aroma and a slight nutty taste without too much power.
